Chocolate Cherry Truffles
- 2 tablespoons Kirsch
- 1 cup fresh cherries, drained and finely chopped
- ½ cup all-purpose cream
- 10 ounces dark chocolate, chopped
- 1 tablespoon honey
- 2 teaspoons cherry flavoring
- 1 teaspoon vanilla extract
- 4 ounces semi-sweet chocolate chips
- 2 ounces white chocolate
- Combine Kirsch and cherries in a bowl. Set aside for at least 30 minutes.
- Pour cream in a pan. Set over medium heat and allow to simmer. Do not boil. Add dark chocolate, cover and set aside for 5 minutes or until chocolate melts. Uncover pan and stir until smooth. Pour in cherries with Kirsch, honey, cherry flavoring and vanilla. Stir until combined. Transfer chocolate mixture in a bowl. Cover with plastic wrap. Chill for about 4 hours, or overnight, until set.
- Form chocolate mixture into 1-inch balls and arrange in a wax paper-lined tray or baking sheet. Chill until coating is ready.
- Place semi-sweet chocolate chips in a heat-proof bowl and set over a pan of barely simmering water. Do not allow bottom of bowl to touch the water. Stir until melted. Allow to cool for 5 minutes. Dip chilled balls in melted chocolate. Return coated truffles into the refrigerator for another 1 to 2 hours or until set.
- Melt white chocolate and drizzle over truffles.
- Add another 2 to 3 tablespoons Kirsch into the truffle mixture, if desired, for more flavor. You may also choose to roll chocolate-coated truffles in finely chopped nuts before chilling again.
