  1. 8 ounces bittersweet chocolate, chopped
  2. ½ cup heavy cream
  3. 1 tablespoon unsalted butter, softened
  4. 2 tablespoons Amaretto liqueur
  5. 2 tablespoons honey
  6. 1 tablespoon light corn syrup
  7. 1 teaspoon vanilla extract
  8. 6 ounces dark chocolate, chopped
  9. 1 tablespoon unsalted butter, softened
  10. 1/3 to ½ cup unsweetened cocoa powder, sifted
  1. Place bittersweet chocolate in a heat-proof bowl.
  2. Heat cream until it nearly reaches boiling point. Remove from heat and pour over chocolate. Allow to stand until chocolate is melted. Stir in butter, Amaretto, honey, corn syrup and vanilla. Mix well until smooth and well combined.
  3. Cover bowl with plastic wrap and chill for 3 to 4, until firm enough to handle. Roll fudge into 1-inch balls. Arrange in a tray lined with waxed paper. Chill until coating is ready.
  4. Melt dark chocolate with butter until smooth. Dip truffle balls into melted chocolate, then roll in cocoa powder.
  5. Return coated truffles into the refrigerator until ready to serve.
  1. Replace cocoa powder with finely chopped toasted nuts or with confectioners’ sugar sifted with 1 teaspoon cinnamon.
