  1. 1-¾ cups butter cookie crumbs
  2. ¼ cup light brown sugar, loosely packed
  3. ½ cup unsalted butter, melted
  4. 1 tablespoon vanilla extract
  5. 1 teaspoon lemon zest, finely grated
Cheesecake Layer
  1. 2 packages (8 ounces each) cream cheese, softened
  2. 1 container (10 ounces) sour cream
  3. ¾ cup confectioners' sugar
  4. 3 large eggs
  5. 2 tablespoons vanilla extract
  6. 1 teaspoon lemon zest, finely grated
  1. 1 cup heavy whipping cream, whipped
  2. 2 cups fresh berries or diced fruit
  3. ¼ cup confectioners' sugar
  1. Preheat oven to 320°F. Line the bottom of a 9-inch spring form pan with baking paper. Set aside.
  1. Combine together butter cookie crumbs, light brown sugar, melted butter, vanilla and lemon zest. Stir until well-blended and resembles coarse crumbs. Press onto the bottom and about 1 inch or so up the sides of prepared pan. Cover with plastic wrap and chill until needed.
Cheesecake Layer
  1. Adjust mixer speed to low and beat cream cheese until smooth and creamy. Increase speed to medium and add sour cream and sugar, continuously beating until light and fluffy, scraping down the sides of bowl as needed.
  2. Beat in eggs one by one, followed by vanilla and lemon zest, beating well after each addition.
  3. Pour batter into chilled crust and smoothen top. Bake for 60 to 70 minutes or until center is almost set but still wiggly when pan is slightly shaken. Turn off oven, leaving cheesecake inside, with the door about an inch or so ajar. Allow cheesecake to cool as the oven cools. Remove pan from oven and cover with plastic wrap. Chill for 6 to 8 hours, or overnight.
To Serve
  1. When cheesecake is ready to serve, run a thin knife around the sides to loosen. Remove pan sides. Top cheesecake with whipped cream, decorate with berries or fruit and dust with sifted confectioners’ sugar. Cut into wedges before serving.
  1. You can choose to omit toppings and spoon warm fruit or berry compote over individual slices.
