Apple Goat Cheese Canapés
- 2 pieces tart green apples
- 2 teaspoons
- 4 ounces goat cheese
- 2 teaspoons olive oil
- 1 teaspoon fresh basil, finely chopped
- salt and pepper to taste
- Wash apples and pat dry with paper towels. Peel and core, then chop until they are about the size of lentils. Drizzle with lemon juice to prevent apples from browning. Crumble goat cheese and toss with apples, olive oil, basil, salt and pepper. Chill, if desired. Serve with toast points, baguette slices or crackers.
- As variation, slice a third apple into 1/8-inch thick wedges. Spoon apple-cheese mixture over wedges and serve.
